Culinary Student participates in "Let Them Eat Art"

Columbia Area Career Center Culinary student, Jacob Knerr, was one of 10 sous chefs selected to be a part of the Columbia Art League's fundraiser,  "Let Them Eat Art."  Chefs select a piece of art and create an appetizer inspired by that artwork. Patrons are invited to view the art and sample as they vote on their favorite interpretation.

Spherified Beets, Knerr's creation, was based on Anastasia Pottinger's  photograph  "Beets." The appetizer was  a combination of beet juice, balsamic vinegar, olive oil, and dill made into a gel, served with goat cheese on a silver spoon. Read the story in the Columbia Tribune.
